To make a very rich cherry jelly without adding gelatin, you need a juicer. Thanks to her, we will get real cherry juice, which, by boiling with sugar, will turn into cherry jelly.

Collect berries, remove twigs, leaves. Sort out rotten and broken berries. Wash the cherries in several waters and put them in a sieve or colander to remove excess moisture.

Remove the seeds from the cherries and squeeze out all the juice with a juicer. If such a unit is not available, you can grind the cherries with an immersion blender to maximum homogeneity and rub through a sieve several times.

Pour granulated sugar into the resulting juice. Bring the cherry syrup to a boil, reduce heat to low and cook until thickened. It is imperative to remove the foam and thoroughly stir it constantly during the cooking process.
