Yellow tomatoes are delicious and sweet varieties of tomatoes that are distinguished by their unusual color and sweet and sour juicy pulp. Yellow tomatoes rolled up on the table in the winter season are a real extravaganza of color and taste. We add to them a little fresh herbs, more fragrant spices - and a bright tasty salad on your table!

We wash the yellow tomatoes, let them dry a little on a kitchen towel. Cut the tomatoes in half, remove the stalks and cut them into wedges. If the fruits are not very large, it is enough to cut them in half. Put the tomatoes in a bowl.

Add salt, pepper, sugar, mustard and coriander to the tomatoes. We wash the fresh parsley, dry it a little on a kitchen towel and then tear off the leaves from the twigs. Add parsley to the tomatoes.

Add vegetable oil and vinegar to the salad. Mix all the ingredients well, cover the bowl with cling film and leave for 1 hour at room temperature.

When the tomatoes are juiced, put them in a jar well washed with baking soda. It is not worth sterilizing the jar, as we will sterilize the salad.

Pour water into a saucepan, put a cotton napkin on the bottom of the pan, put a jar of salad on it so that the water reaches the shoulders of the jar, put the pan on fire. Bring the water in a saucepan to a boil, reduce the heat and leave the salad to sterilize for 10-15 minutes.

Carefully remove the jar of salad from the pan with the help of a stick and tighten it tightly with a boiled lid. Turn the jar upside down and leave to cool completely at room temperature. Then we remove the salad for storage in the refrigerator.
