Julien in French

French julienne is prepared only with fresh mushrooms and without adding meat. We have these mushrooms, which you can always buy fresh. Julienne is prepared only with béchamel sauce, which is ideally combined with fresh mushrooms. French julienne is baked and served in small portioned cocotte bowls.

Wash the champignons well under running water and chop them into thin slices. We clean the onion and chop finely. Heat a skillet with butter and put the chopped mushrooms on it. We fry them until the mushroom juice is completely evaporated, put chopped onions to them and fry everything until tender. Sprinkle the fried mushrooms with salt and pepper to your liking.

To prepare the sauce over low heat, melt a piece of butter in a skillet.

Pour flour to the melted butter and use a wooden or silicone spatula to mix it with butter until smooth and lump-free. We make sure that the flour and butter do not burn.

Then pour milk into the pan with a thin stream and at the same time mix the sauce well with a spatula. Cook the sauce over low heat until it thickens to a condensed milk state. Increasing the cooking time will make the sauce thicker, so stop in time. Add salt and chopped nutmeg to the finished sauce to your liking.

If you have little experience in making sauces, and it turned out to be lumps, correct this deficiency with a hand blender. Do not leave the sauce to cool, but immediately continue to cook your dish.

Grind a piece of hard cheese on a coarse grater. Put mushrooms fried with onions and half of the grated cheese into prepared cocotte makers and mix everything.

Pour the cooked béchamel over the mushrooms with cheese, filling the cocotte makers to the top. Sprinkle the rest of the shredded cheese on the platter.
